Ever since my husband’s diagnosis, I have been on the lookout on what foods I should prepare for him. During the early days, when I still didn’t know that not-so-green vegetables are still loaded with carbs, such as the carrot, I have prepared this dish probably two to three times a week. I have just made this recipe up based on what I could come up with.
Cooking oil (I used olive oil but coconut oil will do)
Mixed vegetables (the one you usually see in the grocery)
Chicken breasts, sliced into thin strips
Soy sauce or Oyster Sauce
Salt and pepper to taste
- Heat pan and add oil.
- Saute garlic and onion then add the sliced chicken breasts. You may sprinkle a little bit of salt and pepper to the chicken.
- Add the vegetables and cover for a few minutes.
- Add oyster or soy sauce.
- Add salt and pepper to taste.
PS: Be careful with the oyster sauce though, as it also contains sugar.
